Dragon Fruits (Pitaya) Enzyme









This is my second batch enzyme. The first batch, I'm using pineapple, lemon and brown candy.
But with bitter taste because I didn't remove the lemon skins. This time I have removed the lemon skins.


Ingredients :-

6 Dragon Fruits (Small)
5 Lemons (Green Type)
1.5 packs of brown candy (pean tang)
1 glass bottle

Methods :-

Wash all fruits, bottle, knife and cutting board. Wind dry all the kitchen utensils and fruits (about one day). To prevent moldy result. If with mold the you've to throw it away.

Remove the skins and slice the fruits. Lay the fruits in the bottle. I put the 1st layer with candy, 2nd layer dragon fruits and the 3rd with lemon. And continue the rest until 3/4 full. Put more candy on the last layer. Cover and put in dark place. On the third day you can see many bubbles. This shows the enzymes are active. You may open the cover to release gases.



Shake the bottle occasionally - daily or 2 days once. To prevent mold. Harvest between 14 to 20 days.

I've harvested my dragon fruits enzyme after 18 days. Here my results:-




I take it 2 tablespoons daily early in the morning. Taste good but my friends said without liquer taste and sweet. Next time, I will harvest it after 3 weeks.

I have read some articles that you have to mix 20 ml of the enzyme with water and drink it 3 times per day with empty stomach.

But I do not try it 3 times daily because I afraid I can't sleep at night.

Sea coconuts with dried longan






I bought a packet of sea coconut from wet market. Normally, I will choose the packet which is not too brown. My children likes sea coconuts.

Ingredients :-

18 pcs Sea Coconuts (Remove Skin)
1 handful of dried longan
Rock Sugar (to taste)
5 pcs Pandan Leaf (Screwpine)
1 liter of Water


Methods :-

Boil the water with pandan leaf. Add sea coconuts and boil for 15 minutes.
Add rock sugar and dried longan. Boil for another 5 minutes.

Serve warm or cold.

Simple Chicken Floss

I've used the chicken breast for making stock. After boil it for an hour, I've taken it out from the stock to make something else. So, I've tried to make chicken floss.

Ingredients :-
2 cooked chicken breast (boil for an hour)
1 tb. sugar
2 tb. soya sauce
Methods :-
Remove bone and tear the meat into small pieces.

Mix the meat with sugar and soya sauce. Heat up a wok with small fire and put in shredded meat (without oil). Use the spatula to press and turn the meat. Tear the meat while frying. Fry untill dry.

My children like these. Within half an hour they finished all.

Sweet & Sour Fish




Ingredients :-


1 black promfret
1 onion
1 tomato
1 garlic
1/2 cup of water
1/2 cup of tomato sauce
1 tb. sugar
1 ts. Salt
3 tb. Oil
Chili / Red pepper (Optional)


Methods:-

Marinate the fish with salt for 1 hour. Wash and pat dry with kitchen towel. Heat up a wok until hot and then add the oil. Fry the fish until cooked (refer below). Remove.


Leave some oil in the wok and add in garlic, onion and chili. Fry for few seconds. Then, add water, tomato sauce, tomato and sugar. Lastly, put in the fish. Cover the fish with the sauce and serve warm with rice.

Pancakes




What going to make for breakfast? Hmm..

Oh yes! I've flour, sugar and eggs. Simple and easy and my children's favorites.

Ingredients :-
2 cups of flour
1.5 cup of water / milk
2 eggs
3/4 cup of sugar
Oil or butter

Methods:-

Put flour and sugar in a bowl. Make a well and put in water and stir it slowly. Then, add in eggs
and stir it until well mixed. Let it rest for half an hour.

Heat the pan with slow fire, put about 1 tb of oil (I used sunflower oil). Then, put one ladle full of batter into the pan. Use the back of the spatula to spread the batter evenly.

Turn and brown the other side. Serve warm.

Rice using thermo pot





Well as for my opening in this blog, I would like to put in rice which is the main dish.

Ingredients :-

2.5 cups of rice (for 2 adults and 3 children)

2.5 cups of water


Methods:-

First, wash and rinse the rice (at least 3 times / almost clear) and put in the water. Then, cook without cover until the water almost dry (about 10 minutes). At this time you can many bubbles. Then, cover and put it into the thermo pot . About half an hour later you may fluff up the rice and close it back again. It can be keep warm for few hours.

I like to use thermo pot to cook rice because the rice won't stick at the bottom. Of course save electricity and its healthy too.
